mmm, GF brownies

Okay, I feel bad about not posting that many recipes, so here is my GF brownie recipe. I also use the vegan brownie recipe in the Gluten Free Vegan sometimes, but this is a nice basic one to start with. It might have started out as a low fat recipe, but low fat and GF don’t usually go well together.

Beat thoroughly together

½ c. sugar (I use either raw or light brown sugar)

¼ c. oil

¼ c. plain white yogurt (or you can use milk, or even leftover coffee)

1 t vanilla

2 large eggs

 

Then add

½ c. GF flour mix

1/3 c. cocoa powder

¼ t salt

¼ t baking powder

 

Mix until lump free, dump into a greased baking dish and bake until set at 375 F/ Gas mark 5/ 190 C about 30 minutes. I usually shut the oven off about ten minutes early to prevent burning.

 

I like these because they are just the right balance between cake-like and dense brownies. You can also go wild with these brownies, adding in whatever you can get your hands on, like the obvious chocolate chips, but also nuts, raspberry or cherry preserves, or a flavored syrup. I also like to use a coffee icing, but you can melt chocolate on top too.
