Melon Salad

Here is a quick weekend recipe, perfect for the melons and berries out now.

Ball half of a honeydew and half of a cantalope into the serving dish.  Add in a few handfuls of fresh raspberries or blueberries, or a mix.  You can use watermelon in place of or in addition to the other melons.  You can also leave out the berries, if you don’t have them. Finely slice fresh mint and toss with fruit.  Splash a tablespoon or two of lemoncello on top and mix some more.  Let sit for 30 minutes before serving.

This makes a beautiful dessert on its own, but you can serve it with something as well.  If you don’t have lemoncello, I think you could probably try this with rum, especially a dark or vanilla rum.  I know there is alchohol in this, but I serve it to Daughter, since it is not so much and provides more of a flavor than anything.  It has never bothered her, but I ask before serving it to another child.
