I make this pie when I have oven space and need a dessert. It’s quite sweet, so a little can go a long way, especially if it’s served with a fruit compote. This oatmeal pie isn’t a Home Front recipe, but it’s in the same spirit – it replaces something expensive and hard to come by with oatmeal and coconut.
The original recipe for this pie is here, but I’ve had to modify it for obvious reasons. I don’t use a pie crust at all, but I suppose you could use a GF one.
Melt 1/3 c margarine with 1/4 c golden syrup. Beat in 1/2 c sugar. When the mixture is cool enough to touch, beat in two eggs and then 1 c oatmeal and 1/2 c unsweetened dried coconut. Dump into a greased pie dish and bake at 375 F/ 190 C/ Gas Mark 5.
To serve, drizzle with cream or serve with fruit. If you don’t have coconut, it’s fine to leave it out.
