Sausage Roll

This is an MoF recipe from a pamphlet about cooking all in one pot (steaming really).  It has been tweaked slightly to make it GF, but I see additional possibilities as well.

Mash 1/2 pound sausage meat (nicely flavored, I think breakfast sausage would be too strong) with 2 Tbl of chopped onion and 1Tbl spoon of chutney/ (English) pickle/ ketchup.  Add a pinch of salt and pepper, along with some herbs that complement the flavor of the sausage.  Mash again, and add in either 1 c of rolled oats or 1 c of cooked rice.  Add in 2 – 3 Tbl of water to bind.

Now, you can do what I did and pop it into the oven in a loaf pan, if you’ve got the oven going already, or you can do what the recipe suggests, which is steaming it in a basin for  1 1/2 hours.  Alternately, I think you could also fry these as patties, but they might fall apart.

Serve this with boiled or mashed potatoes, a carrot salad, and a nice veggie soup as a starter, per MoF suggestion.  I also added a cabbage salad, since everyone was hungry last night.
