Jam buns

These little buns work well on their own, or with a light icing.  They can also be made as a cake, but we prefer the buns, in pretty papers if possible.

Cream 1/2 c margarine with 1/2-2/3 c sugar, depending on your sweet tooth and how sweet your jam is.  Beat in 2 eggs, or 1 egg and 1 TBL soy flour.  Depending on what jam you are using, you can add in a dash or vanilla or almond extract too.  Once the eggs have been thoroughly mixed in, beat in 2 generous TBL of jam or marmalade.  Next fold in 1 1/4 c GF flour.  The batter will be fairly stiff at this point, so add in a few tablespoons of milk (or orange juice if you are using marmalade) until you get a nice batter consistency.

Bake in a greased muffin pan or 8 x 8 square pan at 350 F/ 180 C/ Gas mark 4 until golden and done, between 20 and 40 depending on your pan.  Perfect for little hands or an afternoon tea party.
