Oatmeal raisin bars

I can never say it enough, but oatmeal is a ce(o)liacs best friend.  I snagged this recipe off of Martha Stewart and modified it accordingly.  I cut down on the amount of butter and sugar, so the cookies bars aren’t as sweet, but I don’t think it’s missing anything.  The original recipe is here.

Here’s my version though –

Cream 1/2 c margarine with 1/2 – 2/3 c brown sugar, depending on how sweet you want the cookie bars to be.  Add in 1/2 tsp cinnamon and beat in two eggs.  Stir in 1 c of oatmeal until thoroughly mixed, then add in 1 c of GF flour and mix.  Add in 1 c more of oatmeal (for a total of two cups) and 2-3 TBL of milk.  Finally, add in 3/4 c raisins.  The mixture will be very thick.

Pat the mixture into a greased 8″ square pan and bake at 350 F/ 200 C/ Gas Mark 4 for 20-25 minutes.
