Leek and sausage skillet

Last week, I was milling around the kitchen, knowing I had to cook dinner, but not really being able to figure out what (this is why I usually plan meals in advance).  I hit on the idea below, and it worked out quite well. 

Slice about 1 1/2 cups of leek for each person.  In this case, I also use the darker green ends, but you do not need to.  Slice in a few neutral flavoured GF sausages, about one or two for each person, depending on their size.  I had pork and apple, and they went really well with the leek.  Over low heat, saute the leek and sausages together covered until completely cooked, about fifteen minutes.  Serve with mashed potatoes and a cabbage salad. 

So easy, and relatively off ration…
