This is a Homefront recipe that I’ve adapted for time purposes, but it goes into the bottom of the oven well if you’re already baking something else…
Soak 1 1/3 c desiccated (dry) coconut in 1 generous cup of milk or coconut milk. Soak as long as possible, but around 20 minutes should do the trick. Beat in about two tablespoons of brown sugar and some vanilla if you’d like, then evenly spread 2/3 of the mixture into the bottom of a greased pie plate. Top with enough well chopped apples (I think mangos would be yummy too) to cover the coconut, and then sprinkle generously with sugar. Dot with butter/margarine, then top evenly with the remaining coconut. Dot with butter/margarine again and sprinkle with a bit more sugar.
Bake in a medium oven for about forty minute to one hour until apples are soft and top is browned.
I like the recipe because it can be made vegan quite easily. It also has a nice early spring flavour, as the coconut lightens up the last of the winter apples. Bring on the spring!
