Stuffing and vegetable bake

I threw this together last week in desperation.  I was running out of time and energy, plus I had no idea what to do for dinner.  This wasn’t an overwhelming hit, but it did the trick.

Saute chopped onion and celery as you would for stuffing, and prepare the stuffing mix as normal.  Line the bottom of a greased 8×8 pan with vegetables such as broccoli or root vegetables, and then pack the moist stuffing mix on top.  Bake in a medium oven for 30 minutes, leaving uncovered long enough to brown the top.

I think you could easily add sausage meat to the recipe or serve it with sausage or mince slices…
